Angel Food Cake Recipe

* 1 1/4 cups cake flour
* 1 3/4 cups white sugar
* 1/4 teaspoon salt
* 1 1/2 cups egg whites
* 1 teaspoon cream of tartar
* 1/2 teaspoon vanilla extract
* 1/2 teaspoon almond extract
Directions
1. In the mixer bowl, beat the egg whites until they form stiff peaks, and then add the cream of tartar, the vanilla extract, and the almond extract.
2. In a bowl, sift together the flour, the sugar, and the salt five times.
3. Gently fold in the egg whites in the dry ingredients. Then pour into an ungreased 10-inch cake pan.
4. Place the cake pan in a cold oven. Turn the oven on and set it to 325 degrees F (165 degrees C). Cook for about 1 hour or until cake is golden brown.
5. Invert the cake and allow it to cool in the pan. When completely cooled, remove from pan.
6. Serve with berries, if desired.
